Purpose

To provide advanced technical skills in all facets of baking and pastry production, techniques, and skills. This course is designed for Food Service Specialists with a full understanding and ability to apply baking and pastry principles to Coast Guard food production. The course introduces baking science, terminology and complex ingredients functions through lecture, demonstration, and provides a fast paced hands-on production of specialty products (e. g., tortes and cakes, cookies, pies, French pastry, assorted yeast products, chocolate, sugar artwork, and decorative pieces).
